Vegetable Soup {for my sore throat}


Namaste ~

Sore throats happen infrequently for me. But when they do I want something warm, soothing and slightly spice to aid immune health and support the discomfort. I noticed the last few days that my sore throat was it's worst in the morning and then dissipated towards the end of the day. I decided to make some soup this morning with a pretty decoration of dried curry leaves in the photo above.

Here is the recipe. It tasted delicious.

2-3 Tablespoons ghee

1 medium leek, halved & chopped very thin

2 medium carrots, halved & sliced on diagonal

4-6 small celery stalks, halved & thinly sliced

1 bok choy, thinly sliced

2 hatch peppers, halved & thinly sliced

1/2 c. wild black rice, washed/rinsed

1 1/2 teaspoons turmeric powder

1 teaspoon dried oregano

1 teaspoon red chili flakes

2 teaspoons fenugreek seeds

1 teaspoon black pepper powder

1-2 teaspoons Himalayan pink salt

2 Tablespoons coriander seeds, ground in mortar/pestle

2 teaspoons fennel seed powder

2 cups portobello mushroom soup

7 cups water

Garnish: ghee and when you're not under the weather (shaved parmesan cheese :) )

Method:

To your favorite soup pot add oil and heat on medium flame. Next add turmeric, fennel, fenugreek, black pepper. Swirl the pot to coat all spices. Let your spices cook for a minute and then add leeks. Stir the leeks and let cook for 5 minutes until soft. Add celery and 1/2 cup water, stir and cook 5 minutes. Add coriander and carrots, stir and cook 5 minutes. Add 2-3 cups water, peppers, bok choy, stir and cook 5 minutes on high heat-be careful not to burn. Add chili flakes, salt, oregano and mushroom soup and turn heat to simmer. Add 2-3 cups more water to your liking of thickness, rice and let cook another 15-20 minutes on a gentle heat.
