Keto Lunch, Meal #3 Rainbow Tuna Salad with Endive Leaves
Day 2: Lunch and Meal #3
What a feast for the eyes! You always eat with your eyes first which enhances overall enjoyment of the meal.
Tuna Salad
1 can of tuna, drained and given to a nearby kitty as a treat (Meow meow enjoyed it and then went back to bed!)
1-2 teaspoons of flax seeds; a sprinkle for garnish
1-2 dollops of mayonnaise
A small amount of diced red onion or shallots
Himalayan pink salt
Greens & Veggies
4 endive leaves (these are bitter; cut out part of the white center to reduce bitterness if desired)
1 pickle
1/2 a radish
Sprinkling of avocado
A few slices of yellow bell pepper
Julienned carrots
Dressing options
Apple cider vinegar & oil
Honey dijon vinaigrette
Ginger dressing
