Keto Dinner, Meal #9: Creamy Taco Veggies & Turkey Bacon
Day 13: Dinner and Meal #9 (Last night's dinner and today's lunch) This was an empty-the-fridge dish. We all have those days and I wanted to use up vegetables. You can use sour cream or heavy cream instead of cream cheese.
Ingredients
7 Cherry tomatoes, quartered
1 Julienned carrot
2 small radishes, sliced
1 bulb of fennel, diced
1/4 of orange and yellow bell pepper, diced
1/2 medium onion, diced
6 button mushrooms, sliced
2 Slices of Turkey Bacon, cubed
1/2 cup water or stock of choice
1 packet of taco seasoning (chili, cumin, paprika, garlic, onion, coriander, cayenne)
Knob of butter
1/4 cup cream cheese
Directions
Melt butter on medium heat and add onion and mushrooms. Sauté until wilted. Add all other vegetables and cook stirring regularly. When vegetables are fully cooked add turkey bacon. Cook for a few minutes and then add seasoning mix and water. Cook for a few minutes on medium low heat. Melt in cream cheese and serve.
This is a low-carb meal as it contains some vegetables that have carbohydrates but very minimal. If you like omit carrots or use less carrots for more keto-friendly. For those not on keto you can serve this over rice, polenta or quinoa. YUM!
