Keto Dinner, Meal #11: Oh, These Low Carb Keto Biscuits


Day 19: Dinner and Meal #11

Today I went to the store to pick up almond flour, baking powder and some other items to get into Keto baking. My first attempt was quite successful as I found this delicious recipe: www.kirbiecravings.com

"Low Carb Keto Biscuits"

As per usual I didn't follow the recipe strictly. Instead of sour cream I used cream cheese and also added pepper jack cheese instead of cheddar. I also cooked some in a muffin pan and some flat on a sheet pan. The larger sheet pan one's tasted better. Very fluffy and good flavor. If I had used sour cream I am not sure I would've been able to place them on a sheet pan.

Over the last few days I've really been struggling and craving things like croissants (my absolute favorite), dessert items, chocolate and more. Even beyond the cravings are this idea that I have to sacrifice pleasure to some degree with eating. This is why I had to delve into baking. Carbohydrates have this connection somewhere in the brain to satisfaction and happiness. Trust me, there are amazing Keto options out there and tonight was one of the first nights where I've felt like I've eaten a real biscuit that had carbs.

These biscuits are savory and awesome for breakfast. It's possible if I made a larger one I could create a breakfast sandwich. Maybe another time.

The rest of my meal included scrambled eggs with sliced turkey, cucumbers with balsamic vinegar (yes, carbs in here), a pickle and some blackberries (carbs).
